Khinkali

This is a name for Georgian Dumplings. There are a lot of small or big cafes selling only Khinkali throughout Georgia. Everybody loves this food. Often young people get together to make Khinkali and socialize. Preparation is time consuming and it definitely requires skills. We would like to share our recipe with you, take time and follow the steps. Your efforts will pay off - this delicious, juicy food is marvelous not only fresh, but even next day: just fry in butter and serve for breakfast or lunch.

This recipe makes 60-70 dumplings:
1lb ground beef
1lb ground pork
1 small onion
3 cloves garlic
1/2 cup water
1-2 teaspoons of salt
1 teaspoon ground caraway seed
1/2 teaspoon red hot pepper

5cups white flour
1.5 teaspoons of salt
1 - Mix 5 cups of flour and 1.5 teaspoons of salt in a bowl. Add water into the bowl and make dough. Then put the dough on the board and knead until firm and doesn't stick to your hands. Let the dough sit for a little bit.
2 - Mix beef and pork, add 1/2 cup of water, salt, pepper, caraway seed, grind garlic and onion. Make sure that meat is not lean, or the filling will be hard and tasteless.
3 - Boil the water in the big pot and add salt to taste.
4 - Cut 1/3 of the dough, knead a bit, roll on a floured board flat to 1 - inch thick and cut with a round cookie cutter.
5 - Roll each piece out well untill 5 or 6 - inch round.
6 - Place 1 tablespoon of meat in the middle of a round and close it in the center by folding the edges of the dough together. You should make a firm knot of edges to hold khinkali.
7 - Boil dumplings for 12-15 minutes and serve with black pepper while hot.
