Chakhokhbili

Here is one more dish that makes everybody talk if prepared correctly. The recipe is very simple, ingredients are affordable but must be fresh! ! The freshness of produce adds special quality to the meal. This is why it always tastes better in summer.
Georgians love to eat Chakhokhbili with flat bread and salad. And a glass of nice Tsinandali does not hurt either. Enjoy!

This recipe serves 8:

one whole chicken
2 tbsp butter
2 big onions finely minced
2-3 cloves of minced garlic
1/4 cup chopped basil
1/4 cup chopped parsley
1/4cup of fresh chopped cilantro
4 big tomatoes
salt and red hot pepper to taste
1 - Clean, wash and cut chicken on pieces.
2 -Melt the butter in the deep pan and caramelize the chicken pieces until golden brown.
3 - Add minced onions and stir carefully, you do not want to burn them.
4 - Wash and peel tomatoes, then mince them finely and add to the chicken.
5 - Cover the pan and cook until ready.
6 - Add minced garlic, salt, pepper, basil, parsley, cilantro and cook just for two more minutes. Let it stand for a while for a better flavor. You can serve chakhokhbili even at room temperature.
